Austrian Cheese Soup

Ingredients

1 package Swiss leek soup mix
1 package cream cheese (8 ounce) (cubed)
1 container yogurt (8 ounce), plain
1 teaspoon butter or margarine
3 1/2 cups water
1 cup celery sliced
pepper freshly ground

In a medium-sized saucepan, melt butter over medium heat. Add celery. Cook 2 minutes, stirring constantly. In a medium-sized bowl, stir water into soup mix with a whisk. Stir into celery mixture. Bring to a boil, stirring constantly.
Reduce heat to low, partially cover and simmer 10 minutes, stirring occasionally. Stir in cream cheese until melted. Stir in yogurt until blended (do not boil). Serve hot, sprinkled with freshly ground pepper. Serves 6.
