Carrot Puff

Ingredients

2 bunches carrots young
1/2 cup margarine
2 eggs
milk as needed
dash nutmeg
salt
pepper

Preheat oven to 350.  Place carrots in a tightly covered saucepan with a small amount of water.  Cook until tender.  Mash carrots with fork or blender.  Gradually add the margarine to the mashed carrots.  When all margarine is added and the carrots are smooth, add a small amount of heated milk to lighten the mixture.  Beat in eggs.  Add nutmeg, salt and pepper to taste.  Heap into a lightly oiled baking dish.  Bake until “nicely puffed.”  Serves 4.
