Stew Like You Never Had

Ingredients

Go and get:
4 pounds beef round
1/2 cup flour whole wheat
1/2 cup olive oil
2 1/2 pounds onions
8 garlic large cloves
6 ounces tomato paste
13 ounces beef broth
1 bottle brew dark, stout or porter
2 bay leaves
1 teaspoon thyme
10 ounces peas frozen
10 ounces carrots frozen
salt ?
pepper a lot

Go like this:  Cut beef into 1 1/2″ cubes.  Toss in flour.  In heavy pot, brown pieces well and set aside. Brown well – or your stew will be dumb.  Saute onions & garlic just until soft.  Add tomato paste and cook 1 min. Add broth, brew, bay leaves, thyme & salt (if you like).  Put beef back in too.  Heat to boiling. Reduce heat, cover (a bit) and simmer for 1 1/2 to 2 hrs.  Add carrots & peas 10 mins before serving. (serves a few)

You might want to put fresh veggies or potatoes in this instead of frozen – it only gets better.  Of course, put em in sooner than 10 mins before serving.  Also you might bake some bread and get a good wine to go with this.
