Ingredients

pan spray
3 eggs
1/2 teaspoon cream of tartar
1/4 cup cottage cheese
2 teaspoons soy flour
1 package sweetener artificial
  • Preheat oven to 300 degrees.  Prepare small loaf pan with spray.
  • Separate the eggs.  Beat the egg whites with mixer until frothy.  Add the cream of tartar and beat until stiff peaks form, but the whites are still moist.
  • Combine eggs yolks, cottage cheese, soy flour, and sweetener and fold into the egg whites.  Do not overmix.
  • Pour the mixture into pan and bake for about 40-50 minutes, or until brown and spongy.  Be quiet while it is cooling!!

ONION BREAD:  Add 1/4 C of finely chopped sauteed onion to the egg mixture before putting into pan.  Let the onion cool first though.
CINNAMON BREAD:  Add 1/3 t of cinnamon into soy flour before adding to egg mixture.
