Ingredients

4 mushrooms portobello
2 cups arugula
2 cups watercress
2 tomatoes medium, Italian
1/2 cup mozarella shredded
2 tablespoons black olives
1/2 teaspoon oregano
Vinaigrette
2 tablespoons feta crumbled
2 tablespoons wine vinegar
2 1/2 tablespoons olive oil
1/2 teaspoon sugar

Preheat oven to 400.  Spray both sides of mushrooms with olive oil spray.  Place smooth side down on baking sheet.  Bake for 10 min.

Make vinaigrette and toss with lettuce.  Place 1 cup salad on each plate (4).  Slice tomatoes & peppers and place on mushrooms.  Sprinkle with remaining ingredients & bake 5 min.  Place 1 on each salad.
