Protein Pancakes

Ingredients

1 cup oats whole grain
6 eggs whites only
1 cup cottage cheese
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
2 packages sweetener
1/2 cup maple syrup sugar free
1/4 cup berries mixed
  1. Lightly oil or spray pan – place on medium heat.
  2. Blend first 6 ingredients for one minute till smooth.
  3. Pour batter 1/4 c onto hot skillet.  Cook till bubbly in center and dry at sides – 3 min?  Turn and cook other side for 2 min.
  4. Heat syrup.
  5. Place 1-2 pancakes on plate – top with 1/2 syrup and berries.
