Wasabi Pork Chops

Ingredients

2/3 cup panko (Japanese bread crumbs)
1 egg white, lightly beaten
4 pork chops boneless, center cut (4 oz.)
1 teaspoon peanut oil
1/8 teaspoon salt
1 tablespoon ginger bottled or fresh
1/3 cup chicken broth fat-free, low sodium
2 tablespoons sake dry sherry or white wine
2 tablespoons soy sauce
2 teaspoons sugar
1 teaspoon wasabi paste
1/3 cup green onion thinly sliced
  1. Dip chops in egg white, then dredge in panko.
  2. Heat oil, add pork.  Cook 4 min. per side, or until done.  Remove, sprinkle w/ salt.
  3. Reduce heat to medium.  Add ginger, cook 30 sec.  Combine broth and next 4 ingred, whisk.  Add to pan to deglaze.  Stir in green onions.
  4. Spoon over pork.

(Steam pea pods for a great meal!)
