Linguine with Arugula, Pine Nuts and Parmesan Cheese

Ingredients

1 pound linguine or your favorite pasta
1/2 cup olive oil
3/4 cup arugula washed and trimmed
1 cup parmesan cheese freshly grated
1/2 cup pine nuts or toasted walnuts

Cook pasta in boiling salted water to aldente.  Heat oil in heavy skillet over medium heat.  Add arugula and stir until just wilted, about 30 seconds.  Remove from heat.  Drain pasta and return to pot.  Add arugula and toss.  Add parmesan, salt and pepper to taste.  Transfer to bowl.  Sprinkle with pine nuts and serve immediately.
