Pork and Cashews Wrapped in Lettuce

Ingredients

1/2 pound pork (cut into 1/4" pieces)
2 tablespoons soy sauce
2 teaspoons sugar
2 teaspoons olive oil
1/2 cup chicken stock
1/2 teaspoon salt
1 onion chopped
3 cloves garlic minced
1 inch ginger peeled and minced
1 cup mushrooms sliced
1/2 cup bamboo shoots chopped
1/2 cup water chestnuts chopped
1/2 cup cashews chopped
a few green onions chopped
butter lettuce or Boston, leaves
  1. Mix pork, soy sauce and sugar in a small bowl, set aside.
  2. Heat wok or pan over medium-high heat, add 1 tbsp oil.  Stir fry pork until golden brown, 3-4 minutes.  Transfer to a plate-keep warm.
  3. Mix chicken broth and cornstarch in cup, set aside.
  4. Add 1 tbsp oil to wok, add the onion.  After about 1 minute, add garlic and ginger, stir-fry 30 seconds.  Add mushrooms, bamboo shoots, and water chestnuts, stir-fry 2 minutes.  Add pork, stir fry 1 minute.  Add the cashews, and broth mixture.  Stir-fry 1 more minute.
  5. Transfer to serving platter, sprinkle with green onions.  Serve with lettuce leaves for wrapping.
