Refried Beans

Ingredients

3 tablespoons olive oil
1 onion large, chopped
2 tomatoes large, chopped
2 cans refried beans (16 oz., no fancy flavors!)
2 cups cheese shredded
1/2 cup beer

Heat oven to 350.  Heat oil, add onions, cook until soft.  Add tomatoes, cook 3-4 minutes.  Add beans, stirring until mixture is sort of smooth.  Stir in 1 cup of cheese and beer.  Spoon mixture into 13 X 9″ baking dish.  Sprinkle with remaining cheese, and bake until heated through, about 15 minutes.  Serve hot.
