Preheat the oven to 200℃/400℉ and line a baking tray with parchment paper or a silicon baking mat.
Grate parmesan cheese into a bowl. Use the fine setting.
Place small handfuls of cheese (around 1 tablespoon) onto the lined tray and put the end of the stick in the middle. Cover with a little more cheese so it melts over it and keeps it in place.
Put a small pinch of toppings/flavorings onto the cheese discs.
Bake the parmesan lollipops for 3-4 minutes, until crispy and bubbling.
Allow to cool on the tray or remove to a cooling rack with a palette knife after a minute or two.
