Autumn Butternut Soup

Ingredients

2 tablespoons butter
1 teaspoon thyme
3/4 cup half & half
1/2 teaspoon salt
1 butternut squash small, (1 lb. seeded, peeled, cut into 1/2" chunks)
1 can chicken broth 13 3/4 oz.
1 onion large
1/2 cup yogurt plain
1/4 teaspoon pepper

Melt butter in saucepan.  Add squash, cook 5 minutes.  Add onion, broth, thyme, salt, pepper…. bring to a boil.  Reduce heat and simmer 10 minutes.  In blender, puree mixture.  Return to saucepan….  Add half & half…. Heat through.  Top with a dollop of yogurt.
