Baked Orzo with Mushrooms & Parmesan Cheese

Ingredients

2 tablespoons olive oil
1 cup onion sweet, diced
5 mushrooms medium, diced
2 teaspoons tablespoons garlic minced
1/4 cup chives snipped
1 package orzo (9 ounces)
1/2 cup parmesan cheese grated
1 1/3 cup chicken broth
1/4 teaspoon salt kosher

  1. Heat oven to 375 degrees  Heat oil in large skillet over medium-high  Add onion & mushrooms; cook, stirring often, until softened, about 4 min Stir in garlic Cook 1 min Add chives, orzo, cheese, broth, salt, pepper Transfer to 2-quart casserole
  2. For topping toss bread crumbs with 1 tsp melted butter, sprinkle on top, bake 45 minutes, serve warm or room temp
