- Preheat grill to medium high heat and brush grill grates with oil.
- In a food processor, add parsley, cilantro, mint, garlic and onion. Pulse until finely chopped. Drain liquid.
- Add spices, herbs and beef to a bowl and combine. Don’t overdo on the mixing.
- Form into 1.5” meat balls and add 2-3 per skewer.
- Grill for 8-10 minutes turning the skewer every few minutes for grill marks.
The meat is now tired. Let it rest for a few minutes before serving. Serve with cilantro lime rice, marinated mushrooms and asparagus, picked red onions and a grand jug of red wine.
