Caesar Dressing

Ingredients

1/4 cup (or more) garlic cloves, peeled
1 tablespoon mustard Dijon
2 tablespoons worchestershire sauce
2 eggs yolks only
1 cup olive oil
1 can anchovies 2 oz. (I was alarmed to hear they are in there myself, but trust the recipe)
dash Tabasco sauce
dash vinegar (optional)
1 cup canola oil

For those who say there is no such thing as too much garlic (wise people), we offer this dressing.  The recipe calls for 1/4 cup garlic cloves, which is plenty, but feel free to go wild.  It only gets better.

Blend ingredients except oils.  Alternate pouring oils and ingredients in a thin stream into food processor with the thing going all the time.  I don’t know why the thin stream, just do it.  Keep it running until it is smooth and well mixed.  Pour into glass jar (use the empty oil jar) and refrigerate.  It gets better and better.  It is not only for Caesar salad, but put it on anything.  You may want to just have it as a beverage it is so daggone good.
