Cauliflower “Mac” and Cheese

Ingredients

1 head cauliflower large
6 slicesbacon good (thicker works better, large dice)
1 C. heavy cream
2 oz. cream cheese
2 tsp. Dijon mustard
1 1/2 C. cheddar cheese sharp, shredded
1/8 tsp. garlic powder
Kosher salt to taste
1/8 tsp. black pepper

Preheat oven 375

Render bacon in a large sauce pan. Drain on paper towel.

Leave fat in pan, turn down to medium. Add cauliflower and saute until a bit soft, about 10-15 minutes.

Spray 8 X 8 baking dish with vegetable oil spray. Place cauliflower in dish.

Bring cream to a simmer in a small saucepan, whisk in cream cheese and mustard until smooth.  Stir in 1 C shredded cheese, salt, pepper, and garlic just until cheese melts.

Remove from the heat and pour over cauliflower and stir to combine.

Top with remaining shredded cheese and bacon.

Bake until browned and bubbly hot, about 15 minutes.
