Cheese-Stuffed Chicken with Bacon

Ingredients

2 string cheese 1 oz. sticks
4 chicken breasts, skinless, boneless
1/2 teaspoon sage dried
1/2 teaspoon pepper
1/2 teaspoon salt (only if you really want)
4 bacon strips

(as you all know, i don’t eat a lot of meat but this number is a real killer when you are out to impress but are short on time as we all usually are!!)

Heat oven to 500.  Cut the cheese sticks in half crosswise.  Pound chicken breasts to an even thickness.  Sprinkle the inside of each breast with the sage, salt, and pepper.  Roll each, seasoning inside, around a cheese stick, tucking in the ends so the cheese won’t leak out.  Secure with toothpicks.  Wrap a strip of bacon around, and bake, about 15 minutes.  Serves 4.

Gruyere and oregano
Cheddar and chive topped with sour cream

Basically, you can go nuts and combine your favorite cheese and herb.  Wow.
