Creamy Carrot Soup

Ingredients

2 tablespoons butter
1 onion chopped
2 pounds carrots peeled & sliced
1 tablespoon ginger minced
1/3 cup rice uncooked
1 teaspoon curry powder
1 teaspoon cardamom
8 cups stock chicken or veggie
1/2 cup milk
salt to taste
pepper to taste

Cook onion in butter – 3 min.  Add carrots, stock and all else, except milk.  Simmer until carrots are tender – approx. 1 hour.  Puree, check seasoning and add milk.

Serve!
