Melt fat in 10 in. skillet. Spread half the potato slices over bottom and season. Top w/ a layer of 1/2 the onion and 1/2 the vegetables and season again. Arrange 1/2 the meat atop. Repeat layers of vegs. but save meat for garnish on top. Cover and cook until potatoes are tender. (20 mins.) Break eggs into a bowl; pour over potatoes, breaking yolks evenly. Add meat; spoke-fashion. Cover and cook until eggs are set. (10 mins.) Top with cheese; cover till cheese starts to melt (2 mins.) Cut in wedges and serve.
