You too can make your own cheese even if you are not in Wisconsin! And it’s pretty easy if you don’t mind a little stink and mess. Just take all the milk and boil it up to a good rolling boil. Turn off the heat and add the lemon juice. Stir it up good even though the look and smell at this point might make you a little sick. Let it stand for a good 10 minutes or so until that milk gets good and chunky. These are the curds. Get some cheesecloth or just a dishtowel if you have one that is thin and pretty clean and put it over a strainer. Dump the milk mess into the strainer and let it set a good while making sure the strainer is not sitting in the foul liquid you are straining off. After about 10 minutes more take up the cloth and squeeze the cheese in it with all your might. More foul drippings will escape and now put the goo in a bowl. Sprinkle on a few pinches of salt (more if you like it salty, and who doesn’t). Mix it up and next thing you know you are looking at a bowl of cheese! It is like a ricotta, good on salad, lasagna or to dress up that frozen pizza for company. Eat it quick!
