Michelle’s Grandmomma’s Pimenta Cheese

Ingredients

4 tablespoons mayonnaise (for extra deliciousness, we recommend Lemonaise )
1 jar pimentos small, diced (4 oz.)
3 ounces cream cheese (or try greek yogurt and save a few calories)
1 block cheddar cheese nice, sharp, aged (about a pound or so)
red pepper flakes (just a sprinkle-or more if you like)

(Ok, not her actual recipe-but so good that it seems like it was made by a Southern Grandmomma)

Grate your cheese (no pre-grated allowed) and mix it all thoroughly in a big bowl.  A hand blender comes in handy here or you could use a food processor.  The idea is you want it nice and smooth.  Spread on crackers, use it as a dip, or just eat it by the spoonful—it’s “slap ya nekkid” good!
