In a large mixing bowl, dissolve yeast in the cooled, scalded milk; add two cups flour; beat well. Let stand one-half hour. Batter will become light and bubbly.
Beat together eggs, sugar, melted butter, mace, salt and orange rind in a small bowl. Add to the yeast mixture. Beat thoroughly and add four to five cups of flour to form a stiff batter. Beat well; do not knead; stir with hands if necessary. Let rise until double, about one hour. Punch down. Let rise again.
Turn out on floured board and knead until easily handled. Roll out to 1/4-inch thickness. Cut with round biscuit cutter. Place rounds on lightly greased cookie sheets to rise until double.
Fry in hot oil in deep fryer set to 375 F. Place four or five rounds in the oil and fry about four minutes on each side until light brown. Turn once only. Place on absorbent paper to drain and cool slightly. Roll in sugar.
