Sage, Walnut and Browned Butter Pesto

Ingredients

6 tablespoons butter
1/2 cup sage fresh, chopped
2 cloves garlic minced
1 cup parsley fresh
salt to taste
pepper to taste
1/4 cup walnuts toasted
1 1/2 ounces parmesan cheese

Try any of these variations when good basil gets scarce in the lean, mean months in the Midwest.

  1. Heat butter in 10 inch skillet over med-high heat, swirling constantly until golden brown and butter has nutty aroma (2-4 minutes).
  2. Remove from heat and add chopped sage to butter.
  3. Set aside to cool, about 10 minutes.
  4. Microwave garlic for 5 seconds, peel and mince.
  5. Pulse garlic, parsley, nuts and cheese in food processor.  Add butter mixture and blend until finely ground.
