Salmon Mexicana

Ingredients

1 salmon filet 4-6 oz
1 cup corn frozen
1/2 red pepper chopped
1-1 1/2 cups spinach fresh
1/4 cup salsa
taco chips optional

Saute salmon in olive oil.  Simmer about 3 minutes on each side.  Place corn in dish with 2 Tbs water; cover and microwave for 3 minutes.  Arrange spinach on dinner plate.  Drain corn and place on top of spinach.  Sprinkle with chopped red pepper.  Season with salt and pepper.

Place salmon on corn; garnish with salsa and chips.

You’ve prepared a beautiful healthy meal for yourself in 15 minutes.  Enjoy!

Substitute hamburger for the salmon for a delicious alternate.  Easily can be duplicated for a quick dinner for 2.
