Sesame Noodles

Ingredients

3/4 cup soy sauce
3/4 cup rice wine vinegar
18 tablespoons water cold
3 tablespoons sugar
1 1/2 teaspoons salt
3 teaspoons garlic minced
18 tablespoons peanut butter smooth, room temp.
9 tablespoons sesame oil Asian
3 teaspoons chili oil hot
36 ounces linguine dried, cooked al dente
6 carrots peeled and cut into 3-inch-long matchstick pieces
12 scallions (about 3 inches of green left on) cut-into 3-inch-long matchstick pieces
4 cucumbers seedless, halved lengthwise, seeded and cut
5 limes for garnish
parsley for garnish
  1. Place first 6 ingredients in blender.  Process on high, until smoothed into liquid.  Add peanut butter and process another minute.  Combine oils, with blender running on low speed, drizzle them in.
  2. Place cooked linguine in large bowl and toss well with 3 1/2 cups of sauce.
