Sesame Seed Tuna

Ingredients

1 tuna steak 6-8 oz (1 inch thick)
1 tablespoon sesame oil
2 tablespoons sesame seeds
wonton chips fried (see below)
wasabi sauce (see below)
2 tablespoons olive oil
2 cups baby greens fresh
1 tablespoon pickled ginger sushi (cut into thin strips)

Serves 4

  1. Thaw fish, rinse and pat dry with paper towels.  Cut into 1 in cubes and coat with sesame oil.  Roll cubes in sesame seeds.
  2. In large skillet, cook fish in hot olive oil over med high heat for 3-5 minutes or until brown on all sides.  (Fish should flake easily when tested with fork.)  Fish should still be slightly pink in center.  Remove from heat and let cool slightly.
  3. To serve, place fried wonton chips on serving platter and top with greens and fish slice.  Add wasabi sauce and sliced ginger.  Serve immediately with additional wasabi sauce.

Fried wonton chips:  Heat oil in 3 quart sauce pan.  Fry wonton wrappers, 3-4 at a time, for 45-60 seconds or until crisp and golden.  Drain on paper towels.  Or brush with oil and bake in 350 oven for 6-8 minutes until golden and crisp.

Wasabi Aioli:  Combine mayonnaise, 1 1/2 t wasabi paste, 1 1/2 t minced garlic, 1 t bottled minced ginger, 1/4 t kosher salt and 1/8 t ground black pepper.
