Ingredients

fish any type (skinless and boneless)
ranch dressing
pepper red, green, yellow, or orange
potato chips or bread crumbs or croutons
onion purple
1 bunch green onions
1 package cheese shredded - any flavor
  • Preheat oven to 400 degrees
  • Dip the fish filets in Ranch Dressing – don’t soak, just dip
  • Place in ungreased 9×11 baking dish
  • Sprinkle diced purple onion on top – don’t use too much
  • Lay thinly spliced peppers on top – just a few for color
  • Spread the shredded cheese on top – use as much as you like
  • Sprinkle hand-crushed potato chips, croutons or bread crumbs on top
  • Put green onion on top for color
  • Bake for 13 to 18 minutes.  If the filet if flaky and the sides of the dish are bubbly – it’s done
  • Garnish with chives, parsley or lemon
