Ingredients
fish
any type (skinless and boneless)
ranch dressing
pepper
red, green, yellow, or orange
potato chips
or bread crumbs or croutons
onion
purple
1 bunch
green onions
1 package
cheese
shredded - any flavor
Preheat oven to 400 degrees
Dip the fish filets in Ranch Dressing – don’t soak, just dip
Place in ungreased 9×11 baking dish
Sprinkle diced purple onion on top – don’t use too much
Lay thinly spliced peppers on top – just a few for color
Spread the shredded cheese on top – use as much as you like
Sprinkle hand-crushed potato chips, croutons or bread crumbs on top
Put green onion on top for color
Bake for 13 to 18 minutes. If the filet if flaky and the sides of the dish are bubbly – it’s done
Garnish with chives, parsley or lemon
