Mediterranean Tomato Fondue

Ingredients

3 cloves garlic minced
3 tablespoons butter
1 1/2 cups tomatoes seeded and finely chopped (5 med)
1/4 cup tomato paste
2/3 cup broth chicken or vegetable
1/2 teaspoon pepper
1/4 teaspoon salt
1 1/2 cups spinach finely chopped
1/4 cup parmesan cheese shredded
6 cups dippers assorted (colby, mozzarella cheese, breadsticks, french bread)
  1. In med. saucepan cook garlic in hot butter for 1 min.
  2. Add tomatoes, cook and stir for 3 minutes
  3. Add tomato paste, broth, salt and pepper.  Simmer, uncovered, 15 minutes or to desired consistency
  4. Stir in spinach and parmesan
  5. Transfer to fondue pot
