- Preheat oven to 350. Cream marg. and sugar. Add egg, bananas, and vanilla; mix again. Add flour and nutmeg to creamed mixture; mix briefly.
- In a cup, mix baking soda and water; stir into mixture. Mix only until blended. May add chopped walnuts or pecans.
- Grease muffin tins. Fill almost to top. Bake for 20 to 25 minutes.
Makes 12 muffins. (203 cal; 7 grams fat)
